Evenings belong to the night markets: Shilin for scale, Raohe for the classic experience — a Michelin-listed pepper-bun stall sits right at its temple gate. Day trips write themselves: the hot-spring resort of Beitou inside the city limits, the golden-age teahouse lanes of Jiufen clinging to a hillside above the sea, and Yehliu's surreal mushroom-rock coastline.

The east coast is Taiwan's wild side. Taroko Gorge is the headline act — 19 kilometres of marble canyon where the Liwu river has cut sheer walls hundreds of metres high, threaded by tunnels, temples and the Eternal Spring Shrine above a waterfall. Further south, the Huadong Valley runs between two mountain ranges through rice paddies and hot-spring villages to Taitung, the gateway to Green Island's coral reefs and one of the world's only saltwater hot springs. In the centre of the island, Sun Moon Lake — Taiwan's largest — pairs lakeside cycling (routinely ranked among the world's most beautiful bike routes) with the Alishan mountain railway, tea fields and a sea of clouds at dawn.

The south rewards those who go the distance. Tainan, Taiwan's oldest city and its capital for over 200 years, is the island's food soul — a city of Dutch-era forts, hundreds of temples and street dishes (milkfish soup, coffin bread, dan zai noodles) that locals argue about with religious intensity. Kaohsiung counters with harbourside art districts, the Dragon and Tiger pagodas on Lotus Pond and Fo Guang Shan, Taiwan's largest Buddhist monastery. At the island's southern tip, Kenting National Park adds white-sand beaches and year-round swimming. Everywhere, the 7-Eleven is your friend — Taiwan's convenience stores handle train tickets, bill payments and surprisingly good coffee.
